Green juicing...get your cells a dancin'

Anyone that has ever had a fresh green juice knows that feeling of your cells coming alive when you drink it. I swear I can feel every one of them dancing and shouting for joy with each sip I take. When I was diagnosed with cancer as a teenager, my world was flipped upside down. One day I was taking ballet class dreaming of becoming a professional dancer, and the next day I was going to radiation appointments before school and wondering how to hide the fact that my hair was falling out. While I went through chemotherapy and radiation, I also went down the path of some of the less traditional forms of medicine. I started acupuncture and Chinese herbal medicine. I became vegan and incorporated aspects of the macrobiotic diet. I cut out sugar completely. I started juicing.

Juicing takes a substantial amount of vegetables, but think about it, that's a lot of vegetables going into your body. "Why not just eat all the veggies instead?" you ask. Well, if you're a rabbit, go for it! That's a lot of veggies. One of the main benefits to juicing is that by removing the plant fiber, we reduce the load on our digestive system. All those vitamins, minerals, and enzymes can go to immediately to your cells. By sticking to mostly green veggies, you don't get the blood sugar spike that you would if you were to go heavy on some of the high glycemic index fruits and veggies (carrots and beets). A little apple or pear is fine, but try to make the majority of your ingredients green. A little ginger is great to add since raw juicing is considered energetically cold and can be harsh on the digestive system for those of us with Spleen Qi Deficiency (we'll talk more about this another day). The ginger helps to add some warmth and also calms any nausea if a belly full of green juice is a little too much in the beginning.

And what about the pulp? Well, aside from composting which your soil will love, there are lots of ways to use your veggie pulp. I made dog buiscuits a while back, which our dog at the time absolutely loved. If you go this route, just be sure to double check that your ingredients are all dog-friendly. Other options are using the pulp in stocks, veggie patties, or meat or veggie loafs.
